A Modernist Gastronomy exam taken out of the kitchen and into the wild. BICA 6th semester students, under the program affiliated with Queen Margaret University, Edinburgh, were given a fixed budget, one hidden equipment — bamboo, and one compulsory ingredient — Buff Liver.
No modern tools, no kitchen. Just nature, pressure and purpose.
Their challenge: create a complete four-course menu from scratch, relying on instinct, skill and teamwork. What followed was creativity under fire — and learning that no classroom alone can deliver.
